Salmon with Blue Cheese

I’m not a fan of blue cheese — but my husband loves it! He also likes salmon, so this George Foreman Grill recipe is right up his alley.

Ingredients:

1 tablespoon Worcestershire sauce for chicken
1/4 cup nonfat half & half
1/2 cup crumbled blue cheese, plus extra crumbled blue cheese
1 tablespoon flour
Olive oil
1 teaspoon freshly ground black pepper
4 salmon filets, 1/2-1 inch thick
1/4 cup chives, snipped into 1/4 inch pieces

Directions:

Mix the Worcestershire sauce, half + half, the 1/2 cup blue cheese, and flour in a saucepan over a medium/low heat. Stir until the cheese melts and begins to boil. Remove and keep warm.

Coat grill with cooking spray. Preheat for 5 minutes.

Brush filets with oil and sprinkle with pepper. Grill 4 – 5 minutes, until filets flake easily.

Serve topped with melted cheese sauce, chives and a little extra of the crumbled blue cheese.
